Curried Coconut Chicken
Easy Pork Chops
Lemon Pepper Chicken

Curried Coconut Chicken

Ingredients:

2 pounds boneless skinless chicken breasts, cut into 1/2-inch chunks
1 teaspoon salt and pepper, or to taste
1 1/2 tablespoons vegetable oil
2 tablespoons curry powder
1/2 onion, thinly sliced
2 cloves garlic, crushed
1 (14 ounce) can coconut milk
1 (14.5 ounce) can stewed, diced tomatoes
1 (8 ounce) can tomato sauce
3 tablespoons sugar

Directions:

  1. Season chicken pieces with salt and pepper.
  2. Heat oil and curry powder in a large skillet over medium-high heat for two minutes.
  3. Stir in onions and garlic, and cook 1 minute more.
  4. Add chicken, tossing lightly to coat with curry oil.
  5. Reduce heat to medium, and cook for 7 to 10 minutes, or until chicken is no longer pink in center and juices run clear.
  6. Pour coconut milk, tomatoes, tomato sauce, and sugar into the pan, and stir to combine.
  7. Cover and simmer, stirring occasionally, approximately 30 to 40 minutes.

Easy Pork Chops

Ingredients:

2 pork chops
1 apple, peeled, cored and sliced
2/3 cup apple juice or cider
1 tablespoon ghee
2 tablespoons plain yogurt
freshly ground pepper

Directions:

  1. Heat ghee in a frying pan over medium-high heat.
  2. Add pork chops, placing the apple slices around the edges.
  3. Cook the pork for about 1-2 minutes on each side to brown.
  4. Pour in apple juice, add ground pepper to taste and lower the heat.
  5. Cover and simmer until cooked, about 10 minutes.
  6. Stir in yogurt and bring back to simmer.
  7. Serve with additional apples, rice and/or veggies, using the sauce for flavor.

Lemon Pepper Chicken

Ingredients:

4 organic boneless chicken breasts
2 lemons, juiced and zested
4 tablespoons extra-virgin olive oil
coarse black pepper and coarse sea salt

Directions:

  1. Coat chicken in coarse black pepper and season lightly with salt.
  2. Combine lemon zest and juice with extra-virgin olive oil.
  3. Place sauté pan over medium-high heat, fill the pan until 1/4 inch deep with marinade.
  4. Cook chicken breasts 6-7 minutes on each side, adding marinade as needed to keep the chicken lightly covered while cooking. Make sure the chicken is cooked all the way through.
  5. Transfer to a serving platter and brush with the reserved marinade
